| Makes Friends Cheese Ball | by Jackie Wells Jamison | You are having people over to your house for the big Bears/Packers game. You know the Bears fans and the Packers fan will never agree on a single call or beer so you load up on the Bud Light & Miller Light…better throw in a 6 pack of Coors light incase a stray Colts fan might show up. But what to serve? This cheese ball might be the only thing they all agree on all day. These are the ingredients you will need:
2 --8 ounce blocks of cream cheese softened (usually I don’t waste my money on name brand, but hey it was on sale for the same price as the store brand)
1- 8 ounce can of crushed pineapple
½ cup of green pepper
2 Tablespoons of onion
1 teaspoon of Season Salt
1 ½ cup of crushed pecans First I dump my pineapple in my colander to drain for a bit. |
Then I get my veggies ready to grate (I have also just chopped them real fine with a knife). |
Grate up the pepper ½ cup and dump in the colander with pineapple. |
Same with onion 2 Tablespoons…. |
Now set that all aside to drain for a bit (grating makes the onion and pepper a little watery). |
Now if your pecans are whole or half pieces put them in a zip-lock bag and use your rolling pin to smash them up. |
Until they look like this. |
Now beat your cream cheese until smooth-2-8 ounce blocks. |
Add a teaspoon of season salt and beat that in until mixed well. |
Now add your drained pineapple, onion, and green pepper…beat that until well blended. |
Now add ½ cup of your pecans and mix well. |
It’s kind of soft and really hard to roll in the remaining pecans so I just cover it and stick it in the Frig for about ½ hour or so to firm up a little… |
Then shape it into a ball and roll it in the remaining pecans. |
Serve it with your favorite crackers. |
You can make this up the day before and it is even tastier….
This will also work to unite NASCAR fans during the big race… |
