Quick and tasty dinner … Meatloaf and Mashed Potatoes, All in One Pan.

You will need about a pound of hamburger, half an onion chopped, eggs, breadcrumbs, cheese, cream of mushroom soup, salt, pepper and potatoes.
   
Peel and dice your potatoes. Put them in a 2 quart pan and boil until tender (about 25 minutes). I used about 6 medium size potatoes. While those are boiling …
   
… mix your hamburger, 1 egg, some breadcrumbs (about 1/3 to ½ a cup) diced onion, salt and pepper to taste, and ½ can of cream of mushroom soup (you can use cream of chicken or celery if you prefer). Save the other half can of soup for later in this recipe.
   
After you mix it all together, pat into a 9 inch pie plate and bake at 350 for around 40 minutes or so.
   
While your meatloaf is baking go ahead and mash your potatoes, I use a little butter and milk with some salt and pepper.
   
The meatloaf is done!
   
Now put your mashed potatoes on top, spoon on the rest of the cream of mushroom soup and top with some cheese. Put it back in the oven for 10 minutes or so until the cheese is melted.
   
Yummy!
   
Serving Suggestion … just add your family’s favorite veggie.
